1.Dissolve the sugar in the tea and allow to cool.
2.Tip the sweetened tea into a cocktail shaker along with the flesh and seeds from half of the passion fruit, the vanilla, lemon juice, apple juice and egg white.
3.Shake well.
4.Add a large handful of ice and shake the mixture again.
5.Fine strain into glass.
6.Top with sparkling water and float the remaining passion fruit halve on top.
